When I began the gluten-free, casein-free, soy-free diet for my daughter, I was overwhelmed. The recipes seemed confusing, and the ingredients even more confusing. I had no clue what quinoa was, much less how to pronounce it. Was xanthan gum like chewing gum? How do you get milk from rice? I was ready to give up after the first week. Everything seemed so expensive, and I thought I would be spending every waking moment in the kitchen. The recipes that I did find when I first started out were complicated. I wanted easy recipes that were like "normal" foods I was used to. I started trying to copycat my favorite recipes that were made with gluten and dairy. I had a lot of failures, but got better at it as I went along. Finally, I got to the point where the copycat recipes tasted like the originals!

My hope in writing this cookbook is to help others who are overwhelmed and need answers. The recipes in this book are fun, and are foods that most people consider to be comfort foods. They are also lower in sugar. I have included a listing of where to buy GFCFSF items to make it less overwhelming. I hope you enjoy the recipes!
